Lemon Cheese Bars



Lemon Cheese Bars are a great spring dessert. They are a little lighter than the heavier desserts we usually associate with winter and these are not overly lemon flavored, which makes them perfect for those who do not typically like lemon desserts.


Lemon Cheese Bars

1 box yellow cake mix, the ones with pudding in the mix are preferable
1 8 ounce package softened cream cheese
1/3 cup sugar
1 teaspoon lemon juice
2 eggs, used separately
1/3 cup oil

Preheat oven to 350. Mix dry cake mix with 1 egg and 1/3 cup oil until crumbly. Reserve 1 cup and pat remaining mixture lightly in an ungreased 13x9 pan. Bake 15 minutes. Beat cheese, sugar, lemon juice, and 1 egg until smooth. Spread over baked layer and sprinkle reserved crumb mixture over the top. Bake 15 minutes. Allow to cool and cut into bars.

Oh my gosh! YUM! I love lemon desserts, but only the ones that aren't overpoweringly lemony.

YUM! I have a basic lemon bar recipe that I usually make, but my husband doesn't like lemon nearly as much as I do, so we always end up wasting a few at the end...I'll have to try this recipe and see if it suits him better!

Cream cheese and lemon -- we can't go wrong with this. I love spring and summer desserts with lemons.
